Simple Home Cooked Dinners On Two Separate Evenings.

Lately, I seldom cook everyday as there are only two of us eating. I have been cooking almost everyday for so many years and I guess I am getting lazier as I age. Plus, my hubby doesn't mind eating outside food. Whenever we have some evening events to attend to, then I will usually cook on such evenings.

1st Home Cooked Dinner
After having tasted the double steamed chicken soup in a coconut, I wanted to cook my own version. I went to the wet market to buy one old coconut with flesh that are thick and hard. It was a small coconut. I told the boss that I just wanted it cracked open in halves. I brought it home, somehow I managed to separate the white flesh from the shells. I cut the white flesh into thick pieces. I cut the half chicken into 4 big pieces.
I boiled water in the pressure cooker, add the chicken pieces, coconut flesh, some red dates and some goji berries. Cover the pressure cooker and let it cooked over low fire for half an hour. As it was cooking, I could smell the soup from the hall.
 My own version of chicken+coconut+herbal soup!
Hubby and I had a big bowl of soup each.
 And a simple plate of stir fried vegetables with garlic.
This was our dinner without rice because the chicken is enough to fill us.

Next, I will share with you my 2nd home cooked dinner.

2nd Home Cooked Dinner
There is one dish which we enjoyed at a restaurant and looks like a simple dish to cook. Instead of using salted fish with minced meat, I replaced the salted fish with chopped dried cuttlefish. I marinated the mixture with pepper, oyster sauce, light soya sauce, salt and sugar to taste. The restaurant named this dish as "Poh Poh Tofu". 
 I sliced the soft, silky tofu and lined them up in the centre.
Then I place a thin layer of minced meat mixture on both sides of the tofu.
Then steamed the dish for about 10 minutes or until cooked.
Garnish with some sprinkling of crispy fried onions.
 I bought a big bunch of water convolvulus or kangkong for RM1 at the roadside stall at the recreational park. I stir fried it with garlic.
 These were some left over salted fish strips from the previous evening.
 We had this dinner with rice. We couldn't finish the salted fish and kept it to be eaten with porridge the next evening.
