It has been a while since we last had home cooked roast pork. I went to the pork seller to buy a slap of pork belly. Cut the pork belly into 2 portions. One half went into the freezer and the other half for making roast pork.
Roast pork and spicy shrimp sambal cabbage for dinner.

Pork belly (apply marinate to the meat part and the sides, avoiding the skin) and kept it overnight in the fridge to dry the skin (uncovered with the skin facing upwards)
Took out the roast pork, applied oil and a layer of salt on the skin. Roast in preheated oven. The sides a bit burnt but nice and very crunchy.
When slightly cooled, I sliced it into 3 strips. So nice to hear the crunch as I cut into the skin and the juice oozing out from the meat.
Once cut, it time for dinner.
While roasting, I fried a plate of cabbage with dried shrimps and spicy sambal paste. This was our dinner without any rice. Kept the left over roast pork in the fridge for next day's lunch.

DeleteThe oven temperature? And how long did did you roast it?
ReplyDelete1st 20 mins in a preheated oven 230 deg. C. Then lower temp to 200 deg. C and roast for 50 mins or until meat is cooked. If the skin does not blister midway after roasting, brush off the salt, apply a layer of oil on the skin and back to the oven again.
