Chapati With Chicken Curry & Stewed Pork Belly With Taro

Yesterday morning 43rd day MCO, I went out to look for sunrise but there was none. It has been raining for the past few days and I can only see gray sky. The following sunrise shots were taken before the rainy days.

Breakfast 
I had some chicken and potato curry kept in the freezer.
I thawed and re-heated the curry for breakfast.
I pan fried 2 pieces of frozen chapati bought from the supermarket.
I ate the chapati with the chicken and potato curry.
These are thin and flaky. I prefer the freshly made chapati.
Hubby ate bread with curry and I ate the chapati with curry.

Dinner
Stewed pork belly with taro.
(this is a shortcut version of the steamed woo tau koh)
Blanched green vegetable drizzled with garlic oil, oyster and soy sauce.
I cooked 2 plates of dried Cintan noodle mixed with garlic oil, oyster and soy sauce. I added crispy lard cubes to the noodle. I cut off the fatty part from the pork belly, extracted lard oil from the fat in a pan until the fat turned into crispy cubes.
Dinner for 2 people.
I kept aside 2 portions of pork belly and taro in the freezer.
This photo was taken about a month ago and now the tapioca plants have grown much taller and bushier. After reading Phong Hong's post (here), I too want to try cooking the young tapioca leaves.
I have this type of Buttercup flower in front of house.

  3. Butter cup flower is so pretty. Ah, yesterday didn't go takeaway breakfast but curry chicken potatoes are still as nice with chapati and bread. Wow! You made your own ju yao zhar crispy pork lard. Must be super yummy. Pork belly n taro is a delicious dish. Keep in freezer to enjoy next time is a good idea. When you deep fried the pork lard, did the very hot oil pik pik pok pok jump up n down the pan?

    1. No problem with pik pok oil. Just wipe dry the wok, put in the pieces of pork fat and on the fire low. As the fat is heated up, it slowly release oil. Use a ladle to stir the fat every now and then until you get light golden crispy pork lard. Dish out the crispy pork lard and keep the lard and oil in separate containers. I did this because the piece of pork belly I bought has too much fat on it. I don't know what to do with the fat and then the idea of making crispy pork lard came to my mind.
