This was Monday morning. After we have finished our morning walk, I stopped to buy a ready cut pineapple. The pineapple was for the Penang assam laksa that I will be cooking for dinner that evening.
The simplest way to cook Penang Assam Laksa is to used the above ready made paste that I bought from Penang.
I boiled 6 Mackerel fishes. Next, I separated the meat from the bones and discarded the bones. I added the ready made paste into the water used for boiling the fishes and let it simmer. Then I added the fish meat into the assam laksa broth. Simple to follow instructions are printed on the package.
Cut the pineapple, cucumber, big onions, red chilies into thin strips. Blanch the bean sprouts and pre-soaked rice vermicelli.
Place the rice vermicelli and all the vegetables in a big bowl.
Make sure the assam laksa broth is boiling hot.
Just look at the amount of fish meat.

I kept the extra assam laksa broth and leftover ingredients for next day's lunch.

Next day, I re-heated the leftover assam laksa broth for our lunch.
We each had a big plate of assam laksa with a little noodle and lots of veggie. We used up all the veggie except for the cucumber which I kept back into the fridge. I will think of a way to use the cucumber.

It has been raining every evening or night since last week.
