Smoked Salted Duck & Green Amaranth For Dinner

This was the first Thursday of March.

Took this photo before we started our morning walk at 7:08am.

Home grown Green Amaranth growing in a small patch in front of our house.
I harvested the Green Amaranth and some left over Water Spinach (kangkong) found growing next to the Green Amaranth.
Will be using these greens for dinner.
I re-steamed the thawed frozen smoked salted duck (half a duck) and chopped it up for dinner.
Blanched Green Amaranth with garlic oil, oyster and soy sauce.
This was our dinner for 2 persons.
The smoked salted duck was tasty but the texture a bit hard.


We have not yet seen all of this take place,
but we do see Jesus - who for a while was a little
lower than the angels - crowned now by God
with glory and honor because he suffered death for us.
Yes, because of God's great kindness,
Jesus tasted death for everyone in all the world.

  3. I love your home grown bayam! It is delicious simply stir fried with garlic and salt. They way you do it is also very good.

    1. Thank you, PH. I usually stir fry the bayam with garlic and salt. This is one of the time I choose to blanch the bayam because they were very tender.

  5. That duck looks so good!!! Texture a bit hard? That is the problem sometimes. I buy home only to find that eating it can be quite a struggle. So pissed off!!!

  17. Amaranth is cardio healthy and helps reduce stress.
    Amaranth leaves are an excellent source of protein, with its maximum accumulation in the flowering phase. In addition, the leaves contain a good amount of provitamin A and vitamin C.
    Nancy how lucky you are to have them at your fingertips!

  21. Very flavourful Smoked Salted Duck. I can only eat one piece with rice because if I eat more pieces then I would need to eat more rice. I prefer your Green Amaranth dish For Dinner. Must very tasty since you grow the greens yourself. How many meals for you to eat all the duck?
