Home Cooked Dinner On A Cloudy Day

There are days when I am too lazy to cook. It is especially so when the weather is hot and sweaty and cooking in the hot kitchen is no fun at all. If I have to cook, then I will think of the simplest recipes to avoid spending much time in the kitchen. Here is one of such home cook meal for 2 people.
Lotus root soup, green veggie & steamed rice - a simple balanced meal.
Ingredients for the soup: lotus root, arrowroot, pork rib, red dates & goji berries. Everything is placed in a pressure cooker together with enough water to cook and then seasoned with salt to taste.
Blanched Romaine lettuce drizzled with a bit of soy sauce. Of course it will taste much better with some garlic oil but it was not available that evening.
Steamed rice for 2 people.
Most of the time I like to eat the rice soaked in the bowl of soup. I used to do that in my younger days when I want to watch some TV series in the hall.

Sunrise at 8 am.
Sunrise blocked by the cloud.
Evening sky at 5.50 pm.
It was a dull, gloomy day.

  8. I love to cook. That Lotus root soup sounds like something I would like to try. Will look in my neighborhood for some. I live a block away from the Asian community here in Brooklyn.
