Pineapple And Chicken Curry

I packed back the remaining curry gravy from our previous night's dinner at the restaurant. The curry was too good to be wasted. First, I boiled the pineapple chunks in some water and later added in the few pieces of chicken breast meat. Once the pineapple chunks have released its natural sweetness and the chicken meat is cooked, I added in the curry gravy and let it simmer for a few minutes. The taste and consistency of the curry turned out just nice. It was a slightly sweet, sourish, spicy dish and appetizing dish. 

Dinner Day #1

Scoop out half the portion for dinner and kept the remaining portion for next day's dinner.
There were 5 small pieces of roti prata or roti canai in a packet (Kraft brand).
I have tried 2 other brands and I bought this Kraft brand on my 3rd try. After frying over low heat, the roti canai turned out crispy on the outside, nice and chewy on the inside.
We had 2 pieces of roti canai each for dinner and I will heat up the remaining piece for my next day's lunch.
Our friend gave me 2 big guavas which I cut and pickled with salted plum. I gave one tub back to the friend, one tub to my neighbour and one tub for myself.

Dinner Day #2
I heated up the remaining portion of curry.
The curry still looks good and tasted just as good.
I need to clear the remaining 3 eggs from the fridge, so I cooked onion omelette with the eggs.
Our friend gave me 2 bunches of paku pakis (edible fern shoots) which I used to cook with dried prawns, sambal belacan and coconut milk. I packed and sent half the portion back to our friend who doesn't cook.
3 simple dishes for dinner on a cool, rainy evening.
We had steamed rice to go with the above dishes.
My neighbour used to buy bananas for us. There was twice that the bananas took a very long time to ripen and most were not edible. I think the farmer harvested the bananas too early. In the end I had to used to bananas as compost.
The latest I received from her was this bunch of bananas which ripens within a few days. Some of these bananas have seeds and some without seeds. I am curious and wondered whether I can use the seeds to grow banana plants. Maybe I should collect some of the seeds to germinate and wait to see if they sprout.
The above light and fluffy sponge cakes were given by our neighbour.
Sponge cakes and hot coffee go well together.


When others are happy, be happy with them.
If they are sad, share their sorrow.
Work happily together. Don't try to act big.
Don't try to get into the good graces of important people,
but enjoy the company of ordinary folks.

  1. So what brands of roti did you try and which is the winner?

    I had a colleague who ventured into banana-farming. The first harvest he distributed to us but turned out the green bananas just turned black without ripening.

    1. Out of the 3 brands, I prefer Kraft brand. An ex-colleague harvested her first bunch of bananas and gave me a comb but it turned black without ripening too. She harvested it too early.

  3. I prefer my curry to be spicier and saltier. But I do not mind pineapple in it as well.

Here in the Pacific Northwest bananas ripen too fast- I have learned not to buy more than we can eat in a few days- otherwise I am "forced" to make banana coconut lemon bread! Your piece from the bible is so true- especially not trying to get into the good graces of "important" people. I'd rather mingle and enjoy folks like me- and you! Cheers!

  11. Love the curry because pineapples in curry just taste great! Good that you made full use of the curry gravy and didn't waste it. Thumbs up! The roti canai, out of the 3 brands you tried, which one would u recommend?
