Stuffed Bitter Gourds & Snake Beans Egg Omelette

I was halfway watering my plants outside my house when I noticed the hill was lighted up by the morning sun. I seldom get to see this so I stopped to take a snapshot.

 That morning I harvested the above from my garden: Snake long beans, white and green bitter gourds.
 Bauhinia Kockiana - a sun loving plant.
 Some of the flowers will end up with seed pod just like the above. Once the seed pod dries up, it will burst open and self disperse the black seeds.
 With the white and green bitter gourds harvested from my garden, I stuffed them with fish paste, minced pork, chopped salted fish and spring onion.
 With the excess stuffed ingredients, I made fish and meat balls without the bitter gourd.
 I divided them into 2 portions. The one on the right which was lightly fried to be kept for the next day's dinner.

1st day dinner
 I boiled multi grain rice porridge, Teochew style to eat with the stuffed bitter gourd. The plate on the right was kept next day's dinner.

2nd day dinner
 Stuffed bitter gourd - light frying to heat up for dinner.
 I took some of the snake long beans to make egg omelette with diced beans.
Dinner without rice. Sambal chili sauce as condiment.
Thankful for these simple home cooked meals.

  16. I am amazed by your home garden dear Nancy. It is no small job to maintain such a beautiful garden and take care of them on a daily basis. I should say they not only looked amazing but they tasted delicious when I tried it at home, but of course with veggies purchased.
