Sweet Potota Sweet Drink & Cucumber Salad

I have boiled sweet potato sweet drink or tong sui for a long time. I bought a few sweet potatoes from a road side stall on our way home from morning walk.

Only 4 items needed: Sweet potato peeled and cut into bite pieces, smashed old ginger, cane sugar and water. Boil sweet potato with ginger, pandan or screwpine leaves, and add cane sugar when the potato is soften.
We had sweet potato tong sui for lunch.
There was some leftover julienned cucumber which I prepared for the assam laksa. I also have cranberries and pine nuts in the fridge.
Toasted sesame dressing was added to make a delicious salad.

  14. I didn't know you could make a drink out of sweet potato, how interesting, I'd love to give it a try. I use a lot of sweet potatoes, more and more instead of regular ones.
