I love to eat yam. Some call it taro. I love yam cooked in anyway. You can say I am a great fan of yam. My hubby says that I am crazy for yam and that the mention of yam makes my eyes sparkle! Lol! It is true to some extent.
One afternoon, I was looking in my refrigerator to see what I can cook for dinner. I found some pickled vegetables and a yam which I have bought a few days earlier. I can't remember what I bought the yam for. Anyway, I thought it will be good to cook yam rice for dinner since its been a long time I haven't eaten yam rice.
Here is a photo I have taken of a plate of yam rice that I have cooked. Hubby kept reminding me to add in more dried shrimps. He loves dried shrimps and complained that I am very stingy with dried shrimps. So this time, I added extra dried shrimps. Dried shrimps is not cheap anymore. In fact, nowadays, nothing is cheap anymore. The prices of everything is going up except the value of our currency!
I also found a few eggplants in my fridge. I washed them clean and steamed them. I then peeled off their skin and cut them into shorter lengths. I drizzled some crispy fried garlic and garlic oil plus some oyster sauce over the steamed eggplant.
And from my fridge, I dug out 2 bottles of pickles. Took out some pickled cucumber and pickled long beans to go with the yam rice. And also a small saucer of chili padi in soya sauce.
Hubby and I had a plate of yam rice each. With the eggplant dish, pickled veggie and chili padi, it was a wonderful and satisfying dinner for us.

DeleteYour dinner is a wonderful and satisfying meal for me too because I like to eat yam and brinjal and pickled vege but I will leave out the oyster sauce because I don't like oyster sauce due to the content of sugar in them.

DeleteNancy, I wish I got invited to your house when you cooked this meal....I'm really drooling on your eggplant dish..and it goes so well with your yam rice too! You're a good chef:) ...like your hubby, I like dried shrimps too...it was a long long time I tasted them. I can understand how expensive it could be these days...but we still got to eat. As long as we're healthy...it's all that matters when economy presses in:)
