Ginger Wine Chicken Soup For A Rainy Evening.

The day started off as bright and sunny but by mid afternoon, the sky turned gray and threatened to rain. I took in my dried laundry before it started to pour. For the past weeks, it has been raining almost every afternoon or evening.
True enough by 2.30 pm, it started to pour.
The rain started from the mountain and was fast approaching us. We could hear the big raindrops falling on the awning.
Since it was a cool evening, I cooked this Ginger Wine Chicken Soup. I used half a chicken, plenty of ginger strips and wood fungus strips (mook yee), goji berries, garlic and ginger wine.
Remember these 2 green pumpkins or squash that I bought in Cameron Highland? I gave one to my sister and from the remaining one, I cut half to give to a friend.
Hubby didn't want any rice, so we each had a bowl of soup each.
With the remaining half of the green pumpkin, I cooked it with garlic, dried shrimps and a few chili padi. I also added some of my okra harvested from my garden and the remaining spring onions found in the fridge. I didn't remove the pumpkin skin because I was told it can be eaten.

My friend's hubby found this little stray kitten by the roadside. He took pity on it and took it home.
This abandoned kitty has now found a new home with its adopted family.

    1. The ginger is not sweet and also not sour. Fresh ginger has a pungent aroma and sharp, spicy flavor. Have a great day too!
