I was introduced to this bottle of black vinegar by a friend's mother. I was told that by using this bottle of black vinegar, cooking black vinegar pork trotter will be very easy. Any simple and short-cut recipes will catch my interest and attention. If this turns out good, then I can cook my own Black Vinegar Pig Trotter from now on!
Most important is to get this bottle of black vinegar with this trademark, a pagoda with a lion standing on each side. I found and bought the bottle of black vinegar from Xin Nam Meat Products Sdn. Bhd., at Jalan Sultan Abdul Jalil, Ipoh. I think you can find this selling in the grocery or sundry shops in town.
The contents in this black vinegar are black glutinous rice, orange peel, salt, ginger and vinegar.
The black vinegar is manufactured by this factory based in Penang.
Ingredients for this home cook dish:
- 1 whole pig trotter, cut into pieces (I prefer the front trotter which is more meaty than the back/rear trotter)
- 1 bottle of the above mentioned black vinegar
- Ginger (mixture of young and old ginger, approx. 500 g), cut into 0.5 cm thick slices).
- Black wood fungus (mok yee), soaked, washed, tear into pieces.
- Black beans, washed and soaked for few hours, rinsed.
- Water (I used 1.75 bottle of filtered water to 1 bottle of black vinegar).
- Some dried chilies (optional, for those who like it a bit spicy).
- A little salt to taste.
First I stir-fry ginger without oil over low fire for a few minutes, then add in wood fungus and dried chilies (if using) for another few minutes. Then I place all the above ingredients into a pressure cooker to cook. Once the pressure inside cooker is built up (hissing sound), I lowered the fire and let it simmer until the meat and black bean is cooked and softened. It took approx. about half an hour or more, depending on how soft you want the meat to be.
I divided the cooked dish into portions and kept them in the freezer compartment of the refrigerator.

Add a plate of blanched green veggie (e.g. young and tender watercress), sprinkled with extra virgin oil and some oyster sauce, mixed and ready to serve.

DeleteNancy, I love black vinegar trotters! I wonder if that brand of black vinegar is available here. My auntie told me that the quality of the black vinegar is very important. She recommended a brand to me but I have forgotten what it was.

DeleteI understand this is one of the dish for confinement ladies in West Malaysia but over here in Kuching we have kacangma as confinement dish. I have never cooked before. Maybe one of these days, I will try to cook it. My daughter told me it is a very appetising dish.
